Consistency. Most engineers learn about consistency models through the textbook definition linearizable, sequential, eventual and then stop. But the practical question is never 'is this system consistent?' it's 'under what failure modes does reads return stale values, and what does your product require?' That second framing changes which trade-offs feel painful.
